Easy Keto Brownie

These cakes are very simple, and I think anyone can make them! Not a good baker? Simply follow the simple instructions and you will be instantly in the wonderland of chocolate!

The most important considerations for this recipe are:

Use erythritol powder (or sweets) instead of granule. This will greatly reduce the cooling effect of erythritol and make the chocolate cake dough look smooth as it should. Erythritol is my favorite sugar substitute and the only alternative to my bread. Unfortunately, I am not sure how this recipe works with alternatives like stevia, but if you try it, please let us know how it ended!

Do not overeat the chocolate cake. You don’t want them to dry or burn, letting them finish the bread and keeping them out of the oven is a good way to avoid this.

I think chocolate chips will be better, so I made sure to add a quarter cup of dark chocolate chips from Lily. If you haven’t tried it yet, it’s an incredibly delicious dark chocolate slice with just 2 pure carbs per 14 grams (60 tablets).

Ingredients

  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1/4 cup unsweetened cocoa powder
  • 1 cup powdered erythritol
  • 3/4 cup blanched finely ground almond flour
  • 1/8 teaspoon salt
  • 1/2 cup butter, softened
  • 1/4 cup low carb chocolate chips (Such as Lily’s)
  • 2 eggs

FOR THE FROSTING

  • 4 ounces cream cheese
  • 1/4 cup butter
  • 1/4 cup powdered erythritol
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons unsweetened cocoa powder

Instructions

  1. Heat the oven to 350, then put 8×8 baking sheets and parchment paper.
  2. In a large bowl, butter and erythritol butter. Mix eggs and herbs. Add almond flour, cocoa powder, baking powder and salt.
  3. Fold the chocolate chips and scrape the mixture into a prepared 8×8 baking dish.
  4. Bake for 25-30 minutes. Toothpicks should be usually clean. It may look a little wobbly, but the almond flour will adjust as it cools.
