  • 1 teaspoon paprika
  • 1/2 cup (125ml) chicken stock
  • 3 tablespoons butter, divided or (ghee for paleo diet)
  • 1 tablespoon hot sauce (we used Sriracha)
  • 1/4 teaspoon salt and fresh cracked black pepper
  • 1 pound (450g) green beans, trimmed
  • 4 garlic cloves, minced
  • 3 – 6 skinless, boneless chicken thighs
  • 1/2 cup fresh chopped parsley
  • Juice of 1/2 lemon + lemon slices, for garnish
  • 1 teaspoon onion powder
  • 1/4 teaspoon crushed red chili pepper flakes, optional

DIRECTIONS

1. In a small bowl, add onion powder, sweet pepper, salt and pepper. The chicken thighs are completely seasoned with spices. Set aside when preparing mung beans.

2. Place the mung beans in a microwave-safe dish with 1/2 cup (125 ml) of water. Cook the microwave for 8-10 minutes, until almost done soft, but still crispy.

3. Melt 2 tablespoons of butter in a large skillet over low medium heat. Place seasoned chicken thighs in a skillet. Cook for 5-6 minutes, then stir and cook for another 5-6 minutes until done, and the cooking thermometer shows 165 degrees Fahrenheit (75 degrees Celsius). If the chicken is too brown, reduce calories. Adjust the time according to the thickness. Transfer the chicken to a plate and set aside.

4. In the same skillet, reduce heat and melt the remaining spoon of butter. Add minced parsley, garlic, hot sauce, minced red pepper, and pre-cooked mung beans, cook for 4 to 5 minutes, and stir mixture regularly until you reach your desired level. Add lemon juice, chicken broth and reduce the sauce for a few minutes, until slightly thickened.

5. Return the cooked chicken thighs to the pan and quickly reheat. Adjust the pepper seasoning and serve the chicken thighs with butter and thighs immediately, garnished with crushed hot pepper, fresh parsley and lemon slices (if you like). Please enjoy!
